Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup sugar
  • 2 large eggs
  • ½ cup vegetable oil
  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x5 inch loaf pan.
  • In a bowl, whisk together flour, baking powder, baking soda, and salt.
  • In another bowl, mix sugar and eggs until light and fluffy.
  • Add in the vegetable oil, lemon juice, lemon zest, and vanilla extract. Mix well.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Pour the batter into the prepared loaf pan.
  • Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  • Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack.
  • Once cool, drizzle with a glaze made of powdered sugar and lemon juice, if desired.
