Ingredients

  • 4 lamb chops
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • Salt and pepper to taste
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 cup mixed vegetables carrots, peas, asparagus
  • Mashed potatoes for serving

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a small bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper.
  • Rub the mixture generously over the lamb chops.
  • Heat a skillet over medium-high heat and sear the lamb chops for 3 minutes on each side.
  • Transfer the skillet to the preheated oven and roast for 10 minutes.
  • Remove the lamb chops from the oven and let them rest for 5 minutes.
  • In the same skillet, add the mixed vegetables and sauté until tender.
  • Stir in balsamic vinegar and Dijon mustard into the vegetables.
  • Plate the lamb chops alongside the sautéed vegetables.
  • Serve with creamy mashed potatoes for a complete meal.
