Ingredients

  • 2 cups chopped romaine lettuce
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/2 red onion finely chopped
  • 1/2 cup Kalamata olives pitted and sliced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions

  • Wash all the vegetables thoroughly.
  • Chop the romaine lettuce into bite-sized pieces.
  • Halve the cherry tomatoes and set aside.
  • Dice the cucumber and add it to a mixing bowl.
  • Finely chop the red onion and incorporate it with the cucumbers.
  • Slice the Kalamata olives and add them to the mixture.
  • Crumble the feta cheese over the salad.
  • Chop the fresh parsley and sprinkle it on top.
  • In a separate bowl, whisk together the olive oil and red wine vinegar.
  • Drizzle the dressing over the salad, then toss gently to combine all ingredients.
