Ingredients

  • 1 lb chicken thighs diced
  • 1 lb andouille sausage sliced
  • 1 cup shrimp peeled and deveined
  • 1 onion chopped
  • 1 bell pepper chopped
  • 2 celery stalks chopped
  • 4 cloves garlic minced
  • 1 can diced tomatoes 14 oz
  • 3 cups chicken broth
  • 2 cups long-grain rice
  • 2 tsp Cajun seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add diced chicken thighs and cook until browned, about 5 minutes.
  • Stir in the andouille sausage and cook for another 3 minutes.
  • Add chopped onions, bell peppers, and celery. Cook until softened, about 5 minutes.
  • Stir in minced garlic and cook for 1 minute until fragrant.
  • Add diced tomatoes, chicken broth, Cajun seasoning, salt, and pepper. Bring to a boil.
  • Stir in the rice and reduce heat to low. Cover and simmer for 20 minutes.
  • Add shrimp and cook for an additional 5 minutes, until shrimp are pink and cooked through.
  • Fluff the rice with a fork and garnish with fresh parsley.
  • Serve hot and enjoy your delicious Jambalaya!
