Preheat your oven to 400°F (200°C) if baking, or heat oil for frying.
Cut the jalapenos in half lengthwise and remove the seeds.
In a bowl, mix cream cheese, cheddar cheese, garlic powder, onion powder, and smoked paprika.
Stuff each jalapeno half with the cheese mixture.
Set up a dredging station with flour, beaten eggs, and breadcrumbs.
Coat each stuffed jalapeno first in flour, then dip in eggs, and finally coat with breadcrumbs.
Place on a baking sheet if baking, or carefully place in hot oil if frying.
Bake for 20 minutes or fry until golden brown.
Remove from the oven or oil and set on paper towels to drain.
Serve hot with your favorite dipping sauces.
