Ingredients

  • 3-4 lbs beef roast chuck or sirloin
  • 1 tablespoon olive oil
  • 2 cups beef broth
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 6-8 Italian rolls
  • Giardiniera or sweet peppers for topping

Instructions

  • Preheat your oven to 325°F (165°C).
  • Heat olive oil in a large skillet over medium heat.
  • Sear the beef roast on all sides until browned.
  • Transfer the roast to a slow cooker or Dutch oven.
  • Pour beef broth over the roast.
  • Sprinkle Italian seasoning, garlic powder, onion powder, black pepper, and salt evenly.
  • Cover and cook on low for 4-6 hours, until the beef is tender.
  • Remove the roast and shred the meat using two forks.
  • Return the shredded beef to the cooking liquid to soak in the flavors.
  • Serve the beef on Italian rolls with giardiniera or sweet peppers.
