Ingredients

  • 2 pounds lamb or beef cut into chunks
  • 4 large potatoes peeled and chopped
  • 3 carrots sliced
  • 2 onions chopped
  • 4 cups beef or lamb broth
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Heat a large pot over medium heat and brown the meat on all sides.
  • Remove the meat and set aside. Sauté onions until translucent.
  • Stir in the tomato paste and cook for another minute.
  • Return the meat to the pot and add the broth.
  • Bring to a boil, then reduce heat to low.
  • Add potatoes, carrots, thyme, and bay leaf.
  • Cover and simmer for about 1.5 hours, until meat is tender.
  • Season with salt and pepper, garnish with parsley, and serve hot.
