Heat a large pot over medium heat and brown the meat on all sides.
Remove the meat and set aside. Sauté onions until translucent.
Stir in the tomato paste and cook for another minute.
Return the meat to the pot and add the broth.
Bring to a boil, then reduce heat to low.
Add potatoes, carrots, thyme, and bay leaf.
Cover and simmer for about 1.5 hours, until meat is tender.
Season with salt and pepper, garnish with parsley, and serve hot.
