Line a round cake pan with plastic wrap for easy removal.
Place a layer of ice cream sandwiches at the bottom of the pan.
Spread a layer of softened ice cream over the sandwiches evenly.
Add another layer of ice cream sandwiches on top of the ice cream layer.
Repeat the layering process until all ice cream and sandwiches are used.
Top the final layer with whipped cream, smoothing it out nicely.
Drizzle chocolate syrup over the whipped cream layer.
Sprinkle with colorful sprinkles and crushed cookies if desired.
Cover with plastic wrap and freeze for at least 4 hours or overnight.
Once frozen, remove from the pan, slice, and serve immediately.
