Ingredients

  • 4 cups chicken or vegetable broth
  • 1 cup sliced mushrooms
  • 1 cup tofu cubed
  • 1/2 cup bamboo shoots sliced
  • 1/2 cup shredded carrots
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon chili paste
  • 2 eggs beaten
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • Green onions and cilantro for garnish

Instructions

  • In a large pot, bring the chicken or vegetable broth to a boil.
  • Add sliced mushrooms and shredded carrots; simmer for 5 minutes.
  • Stir in the bamboo shoots and cubed tofu.
  • Mix in soy sauce, rice vinegar, and chili paste.
  • Allow the soup to simmer for another 5 minutes.
  • Slowly pour in the cornstarch mixture while stirring to thicken the soup.
  • Reduce heat and slowly stir in the beaten eggs to create egg ribbons.
  • Taste and adjust seasoning with additional soy sauce or vinegar as desired.
  • Remove from heat and let it sit for a minute.
  • Serve hot, garnished with green onions and cilantro.
