Preheat your oven to 400°F (200°C).
Peel and trim the carrots.
In a large bowl, combine honey, olive oil, salt, pepper, and thyme.
Add the carrots and toss until coated.
Line a baking sheet with parchment paper.
Spread the carrots in a single layer on the baking sheet.
Roast in the oven for 25-30 minutes, stirring halfway through.
Check for tenderness; they should be fork-tender.
Remove from oven and let cool for a few minutes.
Garnish with fresh parsley before serving.
