Ingredients

  • 1 pound of carrots peeled and trimmed
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh thyme
  • Optional: 1 tablespoon fresh parsley for garnish

Instructions

  • Preheat your oven to 400°F (200°C).
  • Peel and trim the carrots.
  • In a large bowl, combine honey, olive oil, salt, pepper, and thyme.
