Ingredients

  • 4 cups cooked rice preferably day-old
  • 2 tablespoons vegetable oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup mixed vegetables carrots, peas, bell peppers
  • 2 eggs lightly beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Green onions chopped (for garnish)

Instructions

  • Heat vegetable oil in a large skillet or wok over medium heat.
  • Add diced onion and sauté until translucent.
  • Stir in minced garlic and cook for about 30 seconds.
  • Add mixed vegetables and cook until tender.
  • Push the vegetables to one side of the pan.
  • Pour the beaten eggs into the empty side and scramble until fully cooked.
  • Combine the scrambled eggs with the vegetables.
  • Add the cooked rice to the skillet, breaking up any clumps.
  • Drizzle soy sauce and sesame oil over the rice and mix thoroughly.
  • Season with salt and pepper, and garnish with chopped green onions.
