In a large pot, brown the ground beef over medium heat until cooked through.
Drain excess fat and return the pot to the heat.
Add the diced onions, carrots, and celery; sauté until softened.
Stir in minced garlic and cook for an additional minute.
Add diced tomatoes and beef broth; bring to a boil.
Reduce heat, and let it simmer for 15 minutes.
Add frozen peas and corn; cook for another 5 minutes.
Season with salt, pepper, and Italian seasoning.
Taste and adjust seasoning if necessary.
Serve hot, garnished with fresh herbs if desired.
