Ingredients

  • 1 lb ground beef
  • 1 cup diced carrots
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 2 cups diced tomatoes
  • 4 cups beef broth
  • 1 cup frozen peas
  • 1 cup corn
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • 1 tablespoon Italian seasoning

Instructions

  • In a large pot, brown the ground beef over medium heat until cooked through.
  • Drain excess fat and return the pot to the heat.
  • Add the diced onions, carrots, and celery; sauté until softened.
  • Stir in minced garlic and cook for an additional minute.
  • Add diced tomatoes and beef broth; bring to a boil.
  • Reduce heat, and let it simmer for 15 minutes.
  • Add frozen peas and corn; cook for another 5 minutes.
  • Season with salt, pepper, and Italian seasoning.
  • Taste and adjust seasoning if necessary.
  • Serve hot, garnished with fresh herbs if desired.
