Melt the butter in a large pot over medium heat.
Add the chopped onion and garlic, sauté until translucent.
Stir in the diced potatoes and cook for 5 minutes.
Add the diced ham and thyme, mixing well.
Pour in the chicken broth and bring to a boil.
Reduce heat and simmer until potatoes are tender, about 15 minutes.
Stir in the heavy cream, and season with salt and pepper.
Cook for another 5 minutes, allowing flavors to meld.
Remove from heat and garnish with chopped parsley.
