Ingredients

  • 2 pounds baby potatoes halved
  • 4 cloves garlic minced
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • 1 tablespoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash and halve the baby potatoes, placing them in a large mixing bowl.
  • Add minced garlic, olive oil, lemon juice, oregano, salt, and pepper to the bowl.
  • Toss the potatoes until they are well coated with the seasoning.
  • Transfer the potatoes to a baking sheet, spreading them out in a single layer.
  • Roast in the preheated oven for 30-35 minutes until golden and crispy.
  • Stir the potatoes halfway through cooking for even browning.
  • Check for doneness by piercing with a fork; they should be tender.
  • Once done, remove from the oven and let them cool for a few minutes.
  • Garnish with fresh parsley before serving.
