  • 1.5 pounds baby potatoes
  • 4 cloves garlic minced
  • 1/2 cup grated parmesan cheese
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • Fresh parsley for garnish

Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash and scrub the baby potatoes thoroughly.
  • Cut the potatoes in half to ensure even cooking.
  • In a large bowl, combine olive oil, minced garlic, salt, pepper, and oregano.
  • Add the halved potatoes to the bowl and toss until well coated.
  • Spread the potatoes evenly on a baking sheet.

  • Return to the oven and roast for an additional 10 minutes until golden brown.
