Ingredients

  • 4 cups mixed greens
  • 1 cup butternut squash roasted
  • 1 medium apple diced
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts chopped
  • 1/4 cup feta cheese crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 400°F (200°C).
  • Peel and cube the butternut squash.
  • Toss the squash with olive oil, salt, and pepper.
  • Spread the squash on a baking sheet and roast for 25 minutes.
  • Meanwhile, wash and dry the mixed greens.
  • Dice the apple and chop the walnuts.
  • In a bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
  • Once the squash is roasted, let it cool slightly.
  • In a large bowl, combine the mixed greens, roasted squash, apple, cranberries, and walnuts.
  • Drizzle the dressing over the salad and toss gently to combine.
