Preheat your oven to 400°F (200°C).
Peel and cube the butternut squash.
Toss the squash with olive oil, salt, and pepper.
Spread the squash on a baking sheet and roast for 25 minutes.
Meanwhile, wash and dry the mixed greens.
Dice the apple and chop the walnuts.
In a bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
Once the squash is roasted, let it cool slightly.
In a large bowl, combine the mixed greens, roasted squash, apple, cranberries, and walnuts.
Drizzle the dressing over the salad and toss gently to combine.
