Ingredients

  • 2 cups all-purpose flour
  • 1 cup warm milk
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 tablespoon active dry yeast
  • 2 tablespoons unsalted butter melted
  • Cornmeal for dusting

Instructions

  • In a small bowl, combine warm milk, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
  • In a large bowl, mix flour and salt.
  • Add the yeast mixture and melted butter to the flour.
  • Stir until a dough forms.
  • Knead the dough on a floured surface for about 5 minutes.
  • Place the dough in a greased bowl and cover it.
  • Let it rise in a warm place for 1 hour or until doubled in size.
  • Punch down the dough and roll it out to about 1-inch thickness.
  • Cut out circles using a biscuit cutter.
  • Dust a baking sheet with cornmeal and place the muffins on it.
  • Cover and let rise for 30 minutes.
  • Cook on a griddle over medium heat for 7-10 minutes on each side until golden brown.
