Ingredients

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • Salt and pepper to taste
  • Paprika for garnish
  • Fresh dill or chives for garnish

Instructions

  • Place the eggs in a pot and cover with water.
  • Bring the water to a boil over medium-high heat.
  • Once boiling, cover the pot and remove it from heat.
  • Let the eggs sit for 10-12 minutes.
  • Transfer the eggs to an ice bath to cool for 5 minutes.
  • Peel the cooled eggs and slice them in half lengthwise.
  • Remove the yolks and place them in a mixing bowl.
  • Mash the yolks with a fork and add mayonnaise, mustard, and vinegar.
  • Season with salt and pepper to taste.
  • Spoon or pipe the yolk mixture back into the egg whites.
  • Garnish with paprika and fresh herbs.
