Ingredients

  • 1 lb chicken breast diced
  • 4 cups vegetable or chicken broth
  • 2 cups carrots sliced
  • 2 cups celery chopped
  • 1 onion diced
  • 4 cloves garlic minced
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup frozen peas

Instructions

  • Prepare all ingredients by washing and cutting as instructed.
  • Place the diced chicken in the crockpot.
  • Add the chopped carrots and celery.
  • Stir in the diced onion and minced garlic.
  • Pour the broth over the ingredients in the crockpot.
  • Add thyme, salt, and pepper to taste.
  • Mix everything gently to combine.
  • Cover the crockpot with the lid.
  • Set to low for 6-8 hours or high for 3-4 hours.
  • About 30 minutes before serving, stir in the frozen peas.
