Ingredients

  • 3-4 lbs beef chuck roast
  • 4 cups beef broth
  • 4-5 medium carrots chopped
  • 3-4 medium potatoes quartered
  • 1 onion chopped
  • 2-3 cloves garlic minced
  • 2 tsp dried thyme
  • 2 tsp rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  • Season the beef roast with salt, pepper, and herbs.
  • Heat olive oil in a skillet over medium-high heat.
  • Sear the roast on all sides until browned.
  • Transfer the roast to the crockpot.
  • Add chopped onions, garlic, carrots, and potatoes around the roast.
  • Pour in the beef broth.
  • Cover and set the crockpot to low for 8 hours or high for 4 hours.
  • Check for tenderness; the meat should easily shred with a fork.
  • Adjust seasoning if necessary before serving.
