Ingredients

  • 4 chicken breasts
  • 2 cups mixed vegetables carrots, broccoli, bell peppers
  • 1 cup chicken broth
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried herbs thyme, oregano
  • 2 tablespoons olive oil

Instructions

  • Place chicken at the bottom of the crockpot.
  • Chop vegetables and layer them on top of the chicken.
  • In a bowl, mix chicken broth with salt, pepper, and herbs.
  • Pour the broth mixture over the chicken and vegetables.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • Check the chicken's internal temperature (should be 165°F).
  • Serve hot, garnished with fresh herbs if desired.
