Place chicken at the bottom of the crockpot.
Chop vegetables and layer them on top of the chicken.
In a bowl, mix chicken broth with salt, pepper, and herbs.
Pour the broth mixture over the chicken and vegetables.
Cover and cook on low for 6-8 hours or high for 3-4 hours.
Check the chicken's internal temperature (should be 165°F).
