Ingredients

  • 2 pounds beef chuck cut into 1-inch pieces
  • 4 medium carrots sliced
  • 3 medium potatoes cubed
  • 1 onion chopped
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  • Start by preparing all your ingredients: chop the vegetables and cut the beef.
  • In a skillet, brown the beef pieces on medium-high heat for about 3-4 minutes.
  • Transfer the browned beef to the crockpot.
  • Add the sliced carrots, cubed potatoes, chopped onion, and minced garlic into the crockpot.
  • In a bowl, mix the beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
  • Pour the broth mixture over the ingredients in the crockpot.
  • Stir gently to combine all the ingredients evenly.
  • Cover the crockpot with its lid and set it to low for 6-8 hours or high for 4-5 hours.
  • Once cooked, check the seasoning and adjust if necessary.
  • Serve hot, garnished with fresh herbs if desired.
