Season the pork chops with salt, pepper, thyme, and paprika.
Heat olive oil in a skillet over medium heat.
Sear the pork chops for 3-4 minutes on each side until browned.
Layer the sliced onions at the bottom of the crock pot.
Add the seared pork chops on top of the onions.
Sprinkle minced garlic over the chops.
Add baby carrots and green beans around the pork.
Pour chicken broth over the entire mixture.
Cover and cook on low for 6-8 hours.
Serve hot with mashed potatoes or rice.
