Ingredients

  • 4 boneless pork chops
  • 1 cup chicken broth
  • 1 onion sliced
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups baby carrots
  • 1 cup green beans
  • 2 tablespoons olive oil

Instructions

  • Season the pork chops with salt, pepper, thyme, and paprika.
  • Heat olive oil in a skillet over medium heat.
  • Sear the pork chops for 3-4 minutes on each side until browned.
  • Layer the sliced onions at the bottom of the crock pot.
  • Add the seared pork chops on top of the onions.
  • Sprinkle minced garlic over the chops.
  • Add baby carrots and green beans around the pork.
  • Pour chicken broth over the entire mixture.
  • Cover and cook on low for 6-8 hours.
  • Serve hot with mashed potatoes or rice.
