Trim excess fat from the beef and cut it into even cubes.
Season the beef with salt and pepper to taste.
Heat a skillet over medium-high heat and brown the beef in batches. Set aside.
In the crock pot, add chopped onions and minced garlic.
Layer in the browned beef cubes on top of the onions.
Add sliced carrots and diced potatoes to the pot.
In a bowl, mix beef broth, tomato paste, Worcestershire sauce, and thyme.
Pour the broth mixture over the beef and vegetables in the crock pot.
Stir gently to combine all ingredients.
Cover and cook on low for 8 hours or high for 4 hours until the beef is tender.
