Ingredients

  • 2 pounds beef chuck cut into cubes
  • 4 medium carrots sliced
  • 3 potatoes diced
  • 1 onion chopped
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 1 tablespoon tomato paste
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  • Trim excess fat from the beef and cut it into even cubes.
  • Season the beef with salt and pepper to taste.
  • Heat a skillet over medium-high heat and brown the beef in batches. Set aside.
  • In the crock pot, add chopped onions and minced garlic.
  • Layer in the browned beef cubes on top of the onions.
  • Add sliced carrots and diced potatoes to the pot.
  • In a bowl, mix beef broth, tomato paste, Worcestershire sauce, and thyme.
  • Pour the broth mixture over the beef and vegetables in the crock pot.
  • Stir gently to combine all ingredients.
  • Cover and cook on low for 8 hours or high for 4 hours until the beef is tender.
