Ingredients

  • 1 lb ground beef or turkey
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 1 can 10 oz diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup cream cheese
  • 4 cups chicken broth
  • 1 cup shredded cheddar cheese
  • Optional toppings: diced tomatoes jalapeños, cilantro, sour cream

Instructions

  • In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  • Add taco seasoning to the beef and stir well.
  • Pour in the chicken broth and bring to a simmer.
  • Add the black beans, corn, and diced tomatoes, stirring to combine.
  • Reduce heat to low and let the mixture simmer for about 10 minutes.
  • Cut the cream cheese into cubes and add to the pot, stirring until melted and smooth.
  • Stir in half of the shredded cheddar cheese until melted.
  • Season with salt and pepper to taste.
  • Let simmer for an additional 5 minutes to thicken.
  • Serve hot, garnished with remaining cheddar cheese and your favorite toppings.
