Ingredients

  • 1 package cornbread mix
  • 1 can creamed corn
  • 1 cup shredded cheese cheddar or your choice
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup diced bell peppers
  • 1/2 cup chopped onions
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Optional: jalapeños for heat

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the cornbread mix, creamed corn, and milk.
  • Add the eggs and mix until well combined.
  • Stir in the shredded cheese, bell peppers, onions, garlic powder, salt, and pepper.
  • Grease a 9x13 inch baking dish with cooking spray or butter.
  • Pour the mixture into the prepared baking dish, spreading it evenly.
  • Bake in the preheated oven for 30-35 minutes, or until the top is golden brown.
  • Check for doneness by inserting a toothpick; it should come out clean.
  • Remove from the oven and let it cool for a few minutes.
