Ingredients

  • 2 cups fresh corn cooked and cooled
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup bell pepper diced
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Instructions

  • Cook the corn if using fresh kernels and cool completely.
  • In a large bowl, combine the cooled corn with diced cucumber.
  • Add chopped red onion and diced bell pepper.
  • Stir in chopped cilantro for added freshness.
  • In a small bowl, whisk together olive oil and lime juice.
  • Season the dressing with salt and pepper to taste.
