Ingredients

  • 4 cups fresh or frozen peaches
  • 1 cup sugar
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup unsalted butter melted
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • Additional sugar for sprinkling

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the fruit, sugar, and lemon juice. Mix well and set aside.
  • In another bowl, whisk together the flour, baking powder, salt, and sugar.
  • Add the milk, melted butter, and vanilla extract to the dry ingredients. Stir until just combined.
  • Pour the fruit mixture into a greased baking dish.
  • Drop spoonfuls of the batter over the fruit, covering it as much as possible.
  • Sprinkle additional sugar on top of the batter for a sweet crust.
  • Bake in the preheated oven for 30-35 minutes, or until golden brown.
  • Let it cool slightly before serving.
  • Serve warm with a scoop of vanilla ice cream, if desired.
