Rinse the rice under cold water until the water runs clear.
In a medium saucepan, heat the olive oil over medium heat.
Add the rinsed rice and toast it for 1-2 minutes, stirring frequently.
Pour in the water and add salt. Bring to a boil.
Once boiling, reduce heat to low, cover the pan, and simmer for 15 minutes.
After 15 minutes, remove the saucepan from heat and let it sit, covered, for 5 minutes.
Fluff the rice with a fork to separate the grains.
Stir in the lime juice and zest until evenly distributed.
Add the chopped cilantro, mixing gently.
Taste and adjust seasoning with more salt or lime juice as needed.
