Ingredients

  • 1 cup long-grain white rice
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • Juice of 1 lime
  • Zest of 1 lime
  • 1/4 cup fresh cilantro chopped
  • Optional: a pinch of black pepper

Instructions

  • Rinse the rice under cold water until the water runs clear.
  • In a medium saucepan, heat the olive oil over medium heat.
  • Add the rinsed rice and toast it for 1-2 minutes, stirring frequently.
  • Pour in the water and add salt. Bring to a boil.
  • Once boiling, reduce heat to low, cover the pan, and simmer for 15 minutes.
  • After 15 minutes, remove the saucepan from heat and let it sit, covered, for 5 minutes.
  • Fluff the rice with a fork to separate the grains.
  • Stir in the lime juice and zest until evenly distributed.
  • Add the chopped cilantro, mixing gently.
  • Taste and adjust seasoning with more salt or lime juice as needed.
