Ingredients

  • 4 boneless skinless chicken breasts
  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 1/2 cup fresh cilantro chopped
  • 3 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Lime wedges for serving
  • Extra cilantro for garnish

Instructions

  • In a bowl, mix lime juice, olive oil, cilantro, garlic, cumin, salt, and pepper.
  • Place chicken breasts in a resealable bag and pour the marinade over them.
  • Seal the bag and refrigerate for at least 30 minutes, preferably 2 hours.
  • Preheat your grill or skillet over medium-high heat.
  • Remove the chicken from the marinade, letting excess drip off.
  • Grill the chicken for 6-7 minutes on each side or until fully cooked.
  • Check the internal temperature; it should reach 165°F (75°C).
  • Remove chicken from the grill and let it rest for 5 minutes.
  • Slice the chicken and serve with lime wedges.
  • Garnish with extra cilantro before serving.
