Heat oil in a pan over medium heat.
Add mustard seeds and let them splutter.
Add cumin seeds and chopped onions, sauté until onions are translucent.
Stir in turmeric powder and red chili powder.
Add mixed vegetables and sauté for a few minutes.
Pour in a little water, cover, and let it cook for about 10 minutes.
Season with salt to taste.
Stir occasionally to prevent sticking.
Cook until vegetables are tender but not mushy.
Garnish with fresh coriander before serving.
