Ingredients

  • 2 cups mixed vegetables carrots, beans, peas, bell peppers
  • 1 medium onion chopped
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • Salt to taste
  • Fresh coriander for garnish

Instructions

  • Heat oil in a pan over medium heat.
  • Add mustard seeds and let them splutter.
  • Add cumin seeds and chopped onions, sauté until onions are translucent.
  • Stir in turmeric powder and red chili powder.
  • Add mixed vegetables and sauté for a few minutes.
  • Pour in a little water, cover, and let it cook for about 10 minutes.
  • Season with salt to taste.
  • Stir occasionally to prevent sticking.
  • Cook until vegetables are tender but not mushy.
  • Garnish with fresh coriander before serving.
