Rinse the jasmine rice under cold water until the water runs clear.
In a large pot, bring 4 cups of chicken broth to a boil.
Add the rinsed rice and bring to a simmer. Cover and cook for about 15 minutes.
In a separate pot, bring water to a boil for the chicken.
Add the whole chicken, ginger, and garlic to the boiling water.
Simmer for 40 minutes or until the chicken is cooked through.
Remove the chicken and let it rest before slicing.
Fluff the cooked rice with a fork and drizzle with sesame oil and soy sauce.
Serve the sliced chicken over the rice, garnished with cucumber and cilantro.
