Ingredients

  • 300 g rotini or fusilli pasta
  • 2 chicken breasts sliced
  • 2 tablespoons olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper sliced
  • 200 ml heavy cream
  • 50 g grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Cook the pasta according to package instructions; drain and set aside.
  • In a large skillet, heat olive oil over medium heat.
  • Add the chopped onion and garlic, sautéing until fragrant.
  • Add the sliced chicken and cook until browned on all sides.
  • Stir in the sliced bell pepper and cook until slightly tender.
  • Pour in the heavy cream and stir to combine.
  • Mix in the grated Parmesan cheese until melted.
  • Season with salt and pepper to taste.
  • Add the cooked pasta to the skillet, tossing to coat.
  • Garnish with fresh parsley before serving.
