Ingredients

  • 2 cups shredded cooked chicken
  • 1 can 10 oz enchilada sauce
  • 1 cup black beans drained and rinsed
  • 1 cup corn kernels
  • 2 cups tortilla chips
  • 2 cups shredded cheese cheddar or Mexican blend
  • 1/2 cup diced onions
  • 1/2 cup bell peppers diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Fresh cilantro for garnish

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix shredded chicken with enchilada sauce, cumin, and chili powder.
  • In a baking dish, layer half of the tortilla chips at the bottom.
  • Spread half of the chicken mixture over the chips.
  • Add half of the black beans and corn over the chicken.
  • Sprinkle with 1 cup of shredded cheese.
  • Repeat the layers with the remaining ingredients.
  • Finish with a final layer of cheese on top.
  • Bake in the preheated oven for 25-30 minutes, until cheese is bubbly and golden.
  • Remove from the oven and let it cool for a few minutes before serving.
