Place the chicken breasts in the bottom of the crockpot.
Sprinkle paprika, cumin, salt, and pepper over the chicken.
Add minced garlic and chopped onion evenly over the chicken.
Pour the diced tomatoes on top of the chicken.
Scatter the sliced bell peppers over the mixture.
Cover the crockpot with its lid.
Set the crockpot to low and cook for 6-8 hours, or high for 3-4 hours.
Once cooked, shred the chicken using two forks.
Stir the shredded chicken back into the sauce and vegetables.
Garnish with fresh parsley before serving.
