Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup diced tomatoes
  • 1 cup bell peppers sliced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Place the chicken breasts in the bottom of the crockpot.
  • Sprinkle paprika, cumin, salt, and pepper over the chicken.
  • Add minced garlic and chopped onion evenly over the chicken.
  • Pour the diced tomatoes on top of the chicken.
  • Scatter the sliced bell peppers over the mixture.
  • Cover the crockpot with its lid.
  • Set the crockpot to low and cook for 6-8 hours, or high for 3-4 hours.
  • Once cooked, shred the chicken using two forks.
  • Stir the shredded chicken back into the sauce and vegetables.
  • Garnish with fresh parsley before serving.
