Ingredients

  • 2 cups pinto beans soaked overnight
  • 4 cups water
  • 1/2 pound bacon chopped
  • 1/2 pound chorizo casing removed
  • 1 onion chopped
  • 2 garlic cloves minced
  • 2 tomatoes diced
  • 1 jalapeño chopped (optional)
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  • Rinse and drain the soaked pinto beans.
  • In a large pot, add the beans and water; bring to a boil.
  • Reduce the heat and simmer until beans are tender, about 1 hour.
  • In a separate skillet, cook the bacon over medium heat until crispy.
  • Add the chorizo and cook until browned.
  • Add the chopped onion and garlic to the skillet; sauté until translucent.
  • Stir in the diced tomatoes and jalapeño; cook for 5 minutes.
  • Once beans are tender, add the skillet mixture to the pot.
  • Season with cumin, salt, and pepper; stir well.
  • Simmer for an additional 10 minutes to combine flavors.
