Remove leaves and stem from the cauliflower.
Cut the cauliflower into florets.
Place florets in a food processor and pulse until resembling rice grains.
Heat olive oil in a large skillet over medium heat.
Add diced onion and sauté until translucent.
Stir in minced garlic and cook for another minute.
Add bell pepper and peas to the skillet and cook for 3-4 minutes.
Stir in cauliflower rice, season with salt and pepper.
Cook for an additional 5 minutes, stirring occasionally.
Garnish with fresh herbs if desired.
