Ingredients

  • 1 medium head of cauliflower
  • 2 tablespoons olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 bell pepper diced
  • 1 cup peas
  • Salt and pepper to taste
  • Fresh herbs optional

Instructions

  • Remove leaves and stem from the cauliflower.
  • Cut the cauliflower into florets.
  • Place florets in a food processor and pulse until resembling rice grains.
  • Heat olive oil in a large skillet over medium heat.
  • Add diced onion and sauté until translucent.
  • Stir in minced garlic and cook for another minute.
  • Add bell pepper and peas to the skillet and cook for 3-4 minutes.
  • Stir in cauliflower rice, season with salt and pepper.
  • Cook for an additional 5 minutes, stirring occasionally.
  • Garnish with fresh herbs if desired.
