In a large bowl, mix flour, sugar, and salt.
Add softened butter and mix until crumbly.
Stir in the egg and wine (or vinegar) to form a dough.
Knead the dough on a floured surface for about 5 minutes.
Wrap the dough in plastic wrap and chill for 1 hour.
Roll out the dough thinly and cut into 4-inch circles.
Wrap the circles around cannoli tubes and seal with a bit of egg wash.
Heat oil in a deep pan to 350°F (175°C).
Fry the dough tubes until golden brown, about 2-3 minutes per side.
Remove and cool before gently sliding off the tubes.
In a bowl, combine ricotta, powdered sugar, and vanilla.
Fold in chocolate chips and fill each cooled shell with the mixture.
