Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 3 tablespoons unsalted butter softened
  • 1 egg
  • 1/4 cup white wine or vinegar
  • 1 1/2 cups ricotta cheese
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips
  • Oil for frying

Instructions

  • In a large bowl, mix flour, sugar, and salt.
  • Add softened butter and mix until crumbly.
  • Stir in the egg and wine (or vinegar) to form a dough.
  • Knead the dough on a floured surface for about 5 minutes.
  • Wrap the dough in plastic wrap and chill for 1 hour.
  • Roll out the dough thinly and cut into 4-inch circles.
  • Wrap the circles around cannoli tubes and seal with a bit of egg wash.
  • Heat oil in a deep pan to 350°F (175°C).
  • Fry the dough tubes until golden brown, about 2-3 minutes per side.
  • Remove and cool before gently sliding off the tubes.
  • In a bowl, combine ricotta, powdered sugar, and vanilla.
  • Fold in chocolate chips and fill each cooled shell with the mixture.
