Ingredients

  • 1 whole chicken cut into pieces
  • 2 medium carrots sliced
  • 2 ribs of celery chopped
  • 1 onion quartered
  • 2 cloves garlic minced
  • 2 medium potatoes diced
  • 1 large tomato chopped
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • 8 cups water

Instructions

  • In a large pot, combine chicken pieces and water.
  • Bring to a boil over medium-high heat.
  • Skim off any foam that rises to the top.
  • Add the onion, garlic, and cumin to the pot.
  • Reduce heat to low and simmer for 30 minutes.
  • Add carrots, celery, and potatoes to the soup.
  • Season with salt and pepper to taste.
  • Simmer for another 20 minutes until vegetables are tender.
  • Stir in the chopped tomato and cook for 5 more minutes.
  • Garnish with fresh cilantro before serving.
