Ingredients

  • 1 lb ground beef or turkey
  • 1 cup cooked quinoa
  • 1 cup mixed bell peppers sliced
  • 1 cup lettuce chopped
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion diced
  • 1/4 cup pickles sliced
  • 1/4 cup cheese optional
  • 1/4 cup special sauce ketchup, mayo, mustard mix
  • Salt and pepper to taste

Instructions

  • Preheat a skillet over medium heat.
  • Season the ground beef with salt and pepper.
  • Form the beef into patties, about 1-inch thick.
  • Cook the patties in the skillet for about 5-6 minutes on each side, until desired doneness.
  • While the patties are cooking, prepare the quinoa according to package instructions.
  • Chop the lettuce, slice the bell peppers, and halve the cherry tomatoes.
  • In a bowl, layer the cooked quinoa as the base.
  • Once the patties are done, place them on top of the quinoa.
  • Add the chopped veggies and pickles around the patty.
  • Drizzle with special sauce and sprinkle with cheese if desired.
