In a large bowl, combine Brussels sprouts with olive oil, salt, and pepper.
Toss until evenly coated.
Spread the sprouts on a baking sheet in a single layer.
Roast in the preheated oven for 20 minutes.
Stir in minced garlic halfway through cooking.
Remove from oven when golden brown.
Drizzle with balsamic vinegar and sprinkle with Parmesan cheese before serving.
