Ingredients

  • 1 cup tapioca flour
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 cup grated cheese mozzarella or Parmesan
  • Salt to taste

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a blender, combine milk, oil, and eggs; blend until smooth.
  • In a large bowl, mix tapioca flour and grated cheese.
  • Pour the blended mixture into the flour and cheese mixture.
  • Stir until well combined and add salt to taste.
  • Grease a muffin tin with oil.
  • Pour the batter into the greased tin, filling each cup about 3/4 full.
  • Bake for 20 minutes or until golden brown.
  • Remove from the oven and let cool slightly before serving.
