Ingredients

  • 200 g pasta fettuccine or your choice
  • 150 g Boursin cheese garlic and herb flavor
  • 1 cup cherry tomatoes halved
  • 2 tablespoons olive oil
  • 1 clove garlic minced
  • Fresh parsley chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese optional

Instructions

  • Boil a large pot of salted water.
  • Add the pasta and cook according to package instructions until al dente.
  • While the pasta cooks, heat olive oil in a skillet over medium heat.
  • Add minced garlic and sauté until fragrant, about 1 minute.
  • Stir in the halved cherry tomatoes and cook for 3-4 minutes until soft.
  • Drain the pasta and reserve 1/2 cup of pasta water.
  • Add the pasta to the skillet with tomatoes and garlic.
  • Mix in the Boursin cheese, stirring until melted and creamy.
  • If the sauce is too thick, add reserved pasta water a little at a time.
  • Season with salt and pepper, then garnish with fresh parsley before serving.
