Boil a large pot of salted water.
Add the pasta and cook according to package instructions until al dente.
While the pasta cooks, heat olive oil in a skillet over medium heat.
Add minced garlic and sauté until fragrant, about 1 minute.
Stir in the halved cherry tomatoes and cook for 3-4 minutes until soft.
Drain the pasta and reserve 1/2 cup of pasta water.
Add the pasta to the skillet with tomatoes and garlic.
Mix in the Boursin cheese, stirring until melted and creamy.
If the sauce is too thick, add reserved pasta water a little at a time.
Season with salt and pepper, then garnish with fresh parsley before serving.
