Cut the chicken thighs into bite-sized pieces.
In a large skillet, heat the vegetable oil over medium heat.
Add the chicken pieces and cook until browned, about 5-7 minutes.
In a separate bowl, mix the bourbon, soy sauce, brown sugar, garlic, and ginger.
Pour the sauce mixture over the browned chicken in the skillet.
Bring the mixture to a simmer, allowing it to cook for 10-15 minutes.
If desired, mix cornstarch with a little water and add to the skillet to thicken the sauce.
Continue cooking for another 5 minutes until the sauce reaches your desired consistency.
Remove from heat and let it rest for a few minutes.
Garnish with chopped green onions before serving.
