Ingredients

  • 8 oz rotini pasta
  • 6 strips of bacon cooked and crumbled
  • 1 cup cherry tomatoes halved
  • 2 cups romaine lettuce chopped
  • 1/2 cup mayonnaise
  • 1 tbsp apple cider vinegar
  • Salt and pepper to taste
  • Optional: chives for garnish

Instructions

  • Cook the rotini pasta according to the package instructions. Drain and rinse under cold water.
  • While the pasta cooks, fry the bacon in a skillet until crispy. Remove and crumble.
  • In a large bowl, combine the cooked pasta, crumbled bacon, halved cherry tomatoes, and chopped romaine lettuce.
  • In a separate small bowl, mix together the mayonnaise and apple cider vinegar.
  • Pour the dressing over the pasta mixture and toss to coat evenly.
  • Season with salt and pepper to taste.
  • If desired, add chopped chives for an extra burst of flavor.
  • Chill the salad in the refrigerator for at least 30 minutes before serving.
  • Give the salad a good toss before serving to redistribute the ingredients.
