Ingredients

  • 2 pounds beef tenderloin
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • Salt and pepper to taste
  • 1 cup beef broth
  • 1 tablespoon balsamic vinegar
  • Vegetables carrots, potatoes, and green beans for roasting

Instructions

  • Preheat your oven to 400°F (200°C).
  • Pat the beef tenderloin dry with paper towels.
  • Rub olive oil all over the tenderloin.
  • Season generously with salt, pepper, garlic, rosemary, and thyme.
  • Heat a skillet over medium-high heat and sear the beef on all sides (about 3-4 minutes per side).
  • Transfer the tenderloin to a roasting pan.
  • Add beef broth and balsamic vinegar to the pan.
  • Roast in the oven for 25-30 minutes or until the internal temperature reaches 135°F (57°C) for medium-rare.
  • Remove from the oven and let it rest for 10 minutes before slicing.
  • Serve with roasted vegetables on the side.
