Ingredients

  • 1 lb ground beef
  • 8 corn tortillas
  • 2 cups red enchilada sauce
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup diced onion
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a skillet, cook the ground beef over medium heat until browned.
  • Add diced onion and garlic, cooking until softened.
  • Stir in cumin, chili powder, salt, and pepper; cook for another 2 minutes.
  • Warm corn tortillas in a dry skillet until pliable.
  • Spread a spoonful of the beef mixture onto each tortilla.
  • Roll the tortillas tightly and place them seam-side down in a baking dish.
  • Pour red enchilada sauce evenly over the rolled tortillas.
  • Sprinkle shredded cheese on top.
  • Bake for 20-25 minutes until the cheese is bubbly and golden.
