Preheat the oven to 375°F (190°C).
In a skillet, brown the ground beef with chopped onions over medium heat.
Drain excess fat and stir in garlic powder, cumin, salt, and pepper.
Spread a small amount of enchilada sauce on the bottom of a baking dish.
Warm tortillas in a pan or microwave to soften.
Fill each tortilla with a portion of the beef mixture and a sprinkle of cheese.
Roll the tortillas and place them seam-side down in the baking dish.
Pour remaining enchilada sauce over the rolled tortillas.
Top with additional cheese.
Bake for 20-25 minutes or until cheese is bubbly and golden.
