Ingredients

  • 1 lb ground beef
  • 1 cup onion chopped
  • 2 cups enchilada sauce
  • 1 cup shredded cheese cheddar or Mexican blend
  • 8 flour tortillas
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Sour cream for serving

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a skillet, brown the ground beef with chopped onions over medium heat.
  • Drain excess fat and stir in garlic powder, cumin, salt, and pepper.
  • Spread a small amount of enchilada sauce on the bottom of a baking dish.
  • Warm tortillas in a pan or microwave to soften.
  • Fill each tortilla with a portion of the beef mixture and a sprinkle of cheese.
  • Roll the tortillas and place them seam-side down in the baking dish.
  • Pour remaining enchilada sauce over the rolled tortillas.
  • Top with additional cheese.
  • Bake for 20-25 minutes or until cheese is bubbly and golden.
