Preheat your oven to 400°F (200°C).
Wash and scrub the sweet potatoes thoroughly under running water.
Poke holes in each sweet potato with a fork to allow steam to escape.
Rub each potato with olive oil and sprinkle with salt and pepper.
Place the sweet potatoes on a baking sheet lined with foil or parchment paper.
Bake in the preheated oven for 45-60 minutes, or until tender.
Check doneness by inserting a fork; it should slide in easily.
Remove from the oven and let cool for a few minutes.
Cut a slit in the top of each potato and gently squeeze the ends to open.
Top with butter, sour cream, or your favorite toppings, and garnish with chives.
