Heat olive oil in a large pot over medium heat.
Season the chicken thighs with salt, pepper, cumin, and paprika.
Brown the chicken in the pot for about 5 minutes on each side.
Remove chicken and set aside.
In the same pot, add chopped onion and bell pepper; sauté until softened.
Add minced garlic and cook for another minute.
Stir in the diced tomatoes and chicken broth.
Add the rice, return the chicken to the pot, and bring to a boil.
Reduce heat, cover, and simmer for 30 minutes until rice is cooked.
Fluff the rice with a fork, garnish with cilantro, and serve.
